Mondays should feel like a breeze. Go WLDE and try (but don’t try this at home) a little boozy liquid nitrogen ice cream. We use a Philly-style base for a richer and more lush flavor that is matched by a completely vegan coconut cream base. Either way - it’s WLDEly delicious.

Is it melons or madness?? The unbelievable fruit flavors of cantaloupe are a perfect match for Mezcal in the “Cantina”, with a blend of fresh lemon and lime juices to round out the earthy qualities of both.

There is nothing more iconic and French than Champagne. Meet “Les Perdus” - with a tip of its hat to that French icon, this spritz combines champagne vermouth (house made), fresh cucumber juice, @stgermaindrinks and dill for a crisp and bright tipple for any day of the week.

2oz WLDE Champagne Vermouth
1/2oz St Germain
1/2oz Cucumber Juice
Spring of Dill
3oz Seltzer Water
Combine all ingredients in a shaker except for the Seltzer. Shake vigorously with ice, just until you hear the ice crack. Fine strain into a Collins glass over ice. Top with 3oz of Seltzer water that carries a bite. (Club Soda should be avoided as the additives will break the soft character of the dill). —————————————-
Champagne Vermouth Recipe
Set your sous vide to 155 degrees.
Open your bottle of demi-sec champagne - such as @champagnebaronfuente that we used here - and let the bubbles dissipate.
Combine in ziploc measures of Gentian, Wormwood and Angelica with herbs and spices including lavender, chamomile, cardamom, lemon verbena, lemongrass, Rosemary, cinnamon, allspice, citrus peel and more.
Add your champagne to the bag, seal and dunk it into your water bath. Set a timer for 2 hours and wait patiently for deliciousness. Once the timer is done, quickly place the bag in an ice bath for 10 minutes. Strain the liquid from the solids and add 2/3 a cup of Fino Sherry and 1/2 cup of simple sugar.
